We use only the freshest domestic motsu, seasoned with mentaiko essence and marinated in a mixture of mellow red wine and sweet aka miso (red miso) paste. This creates motsu with a rich, umami flavor that you can enjoy.​ ​

We will light the flame at your table when we serve this dish. It is ready to eat when you see steam rising from the pot lid. Once the flavors reach your lips, it will be tempting to drink the entire dish quickly, but we recommend savoring the flavors and texture of the fresh, soft motsu.​ ​

Our Mentai-Butter Toast uses a wheat bread with a pleasant, crunchy texture. It can be eaten alone, or soaked in the motsu-ni. Both our motsu-ni and Mentai-Butter Toast pair incredibly well with wine. Please feel free to try this delicious experience for yourself.
