The mentaiko is then drizzled with our specially blended "mentai-ju sauce," which is full of umami ingredients and is specially made to go well with the Hakata specialty "mentai-ju." This sauce further enhances the mentaiko's original flavor.

The mentaiko is soaked in a seasoning liquid containing a variety of umami ingredients, such as kelp and chili peppers, allowing the flavors to soak in slowly.
At our restaurant, to further enhance the umami flavor, we wrap each piece of mentaiko by hand in kelp that has been soaked in a special seasoning sauce.

The popular "Mentaiju Konbu Wrapped Metaiko" has been developed as Original Goods.
The dipping sauce is made by slowly simmering the rich mentaiko, a stock made from flying fish and kelp, along with vegetables such as tomatoes and shiitake mushrooms, so you can enjoy it down to the last drop.
