The red pepper we use is carefully selected to go with our mentaiko and rice, and each level of spiciness from standard, mild, medium, and hot has different kinds of red pepper added so that the umami flavor can stand out within the spiciness. To design a way to standardize the taste of mentaiko, various umami components like kelp and other ingredients were arranged together to create a sumptuous taste. At our preparation facility on the third floor the mentaiko are marinated, and then with exquisite timing they are individually wrapped with umami-infused kelp.
