たれの辛さは単純に唐辛子の量を増やして調整するのではなく、明太子やごはんに合う唐辛子を厳選し、基本・小旨辛・中旨辛・大旨辛、それぞれ唐辛子の種類を変えることで辛さの中にも旨味が際立つ調整を行っています。辛さだけではないコクと味の広がりをぜひお楽しみください。

Normally, that would be the end of it, but in order to further infuse the umami ingredients, we manually wrap each mentaiko with kelp marinated in a special seasoning sauce.
By doing so, the combination of mentaiko, which contains inosinic acid, and kelp, which contains glutamic acid, creates a synergistic effect of the umami ingredients, giving the flavor even more deliciousness and depth.
