"Mentai-ju®" is a Hakata specialty in which a whole piece of mentaiko wrapped in kelp that has been painstakingly marinated is placed on top of hot rice covered in nori seaweed.

The seasoning in which the mentaiko is marinated is made with various umami ingredients such as kelp, which gives it a deep flavor.

The special sauce, specially formulated to match Mentaiju®, enhances the flavor of the mentaiko, bringing out even more deliciousness.

Choose your sauce and spiciness.

For "Mentai-ju®︎," you can choose the spiciness of the sauce to your liking.

The spiciness of the sauce is not adjusted by simply increasing the amount of chili peppers, but by carefully selecting chili peppers that go well with mentaiko and rice, and adjusting the spiciness to bring out the umami flavor by changing the type of chili pepper used for each level: basic, slightly spicy, medium spicy, and very spicy. Please enjoy the richness and breadth of flavor that goes beyond just the spiciness.

Standard The characteristic of this sauce is the condensed umami flavor of kelp. This sauce is recommended for people who want to primarily enjoy the taste of the mentaiko itself.
Mild The mild spice brings out the sweetness and umami flavor. This is recommended for people who are seeking a mild, elegant spiciness with their meal.

Mentaiko is marinated in a seasoning liquid containing various umami ingredients such as kelp and chili pepper, allowing the flavor to soak in.
In order to ensure a uniform taste, skilled craftsmen check and adjust the quality, grain texture, and degree of pickling SUN.

Normally, that would be the end of it, but in order to further infuse the umami ingredients, we manually wrap each mentaiko with kelp marinated in a special seasoning sauce.
By doing so, the combination of mentaiko, which contains inosinic acid, and kelp, which contains glutamic acid, creates a synergistic effect of the umami ingredients, giving the flavor even more deliciousness and depth.
This is a very important cooking process to bring out the deliciousness of Mentaiju.

■Measures to stabilize the taste

Due to its shape, kelp is said to be a delicate ingredient whose flavor is difficult to stabilize.
At our store, we have gone through a lot of trial and error not only in formulating special seasonings, but also in marinating time and temperature.
